white bean chicken chili

Today we are having a little get-together at my brother and sister in law’s (Tim and Jen) with a few family members to celebrate (early) my big brother Aaron’s birthday and to watch the Eagles beat up on the Lions. Michelle offered to make the main course for lunch. In the past, she’s made a bangin’ white bean chicken chili. So she decided to make a pot of it for our time with family today. She initially got the recipe online, so last night she hopped onto the website and wrote down the ingredients. If you don’t use All Recipes, you should start now. Great site. Anyhoo, the recipe was for 4 people, so Michelle doubled it, since there will be seven of us, plus some wee ones.
We went to the local WalMart and got all of the ingredients we did not already have. We got home and started preparing them for the chili. All along, Michelle kept saying, “This seems like a lot.” But she continued. By the time everything was added to the 6 quart stock pot, there was literally only an inch to spare at the top. Have you ever tried to simmer and stir 6 quarts of chili? I had to laugh when I saw the volume of food. Of course, by then it was 1:00 a.m., and things are usually funnier the more sleep-deprived you become. But we have a lot of chili.
So we are freezing some for future consumption and taking a full crock pot over to Tim and Jen’s.
